Air Fryer Zucchini Fritters
  1. Add the shredded zucchini to a large colander and sprinkle with ½ teaspoon of salt. Let it sit for 15 minutes.

  2. Next, squeeze all of the excess water out by pressing with your hands, and pat dry with a paper towel.

  3. Place the drained zucchini in a large bowl and add the rest of the ingredients. Stir until well combined.

  4. Preheat the Air fryer to 390 F. Add parchment paper to the bottom of the basket.

  5. Take 2 tablespoon-size mounds of the mixture, form a fritter, slightly flatten it with your hand, and place it in the basket.

  6. You may have to cook these in batches.

  7. Air fry the fritters for 7 minutes per side, or until they're golden and crispy.

  8. Add toppings, and serve warm with lemon and dipping sauce on the side.
