Add the shredded zucchini to a large colander and sprinkle with ½ teaspoon of salt. Let it sit for 15 minutes.
Next, squeeze all of the excess water out by pressing with your hands, and pat dry with a paper towel.
Place the drained zucchini in a large bowl and add the rest of the ingredients. Stir until well combined.
Preheat the Air fryer to 390 F. Add parchment paper to the bottom of the basket.
Take 2 tablespoon-size mounds of the mixture, form a fritter, slightly flatten it with your hand, and place it in the basket.
You may have to cook these in batches.
Air fry the fritters for 7 minutes per side, or until they're golden and crispy.
Add toppings, and serve warm with lemon and dipping sauce on the side.
