Ingredients
1 ½ lbs beef stew meat or sirloin tips, cut into cubes
Salt and pepper, to taste
2 tbsp olive oil
1 medium onion, diced
2 cloves garlic, minced
3 cups beef broth
1 tbsp Worcestershire sauce
1 tbsp soy sauce
1 tsp dried thyme
2 tbsp cornstarch mixed with 2 tbsp cold water (for slurry)
12 oz egg noodles
Fresh parsley, chopped (for garnish)
Directions
Season and Brown Beef: Season the beef tips with salt and pepper. In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add beef and sear on all sides until browned. Remove beef and set aside.
Sauté Aromatics: In the same skillet, add the onion and sauté until softened, about 3-4 minutes. Add the minced garlic and cook for another 1 minute until fragrant.
Make the Gravy: Add the beef back to the skillet. Pour in beef broth, Worcestershire sauce, soy sauce, and thyme. Stir well, scraping up any browned bits from the bottom of the pan. Bring to a simmer, then reduce heat to low, cover, and cook for 1 to 1 ½ hours, or until the beef is tender.
Thicken the Gravy: In a small bowl, mix cornstarch with cold water to create a slurry. Stir it into the simmering beef mixture. Cook for an additional 5 minutes until the gravy thickens.
Cook the Noodles: While the beef is finishing, cook the egg noodles according to package instructions. Drain and set aside.
Serve: Serve the beef tips and gravy over a bed of egg noodles. Garnish with fresh parsley and enjoy!
