Cook the chicken in a hot pan until fully done, then remove and set aside
In the same pan add most of the green onions, minced shallot, garlic, ginger and chili flakes
Pour in the neutral oil and let it bubble
Stir in hoisin, oyster sauce, soy sauce, honey and lime juice to make the sauce thick and glossy
Add the chicken back in followed by the cooked udon and remaining green onions
Toss until everything is coated and saucy
Serve hot and enjoy
