Healthy Date And Nut Cake
  1. Soak 2 cups of dates in hot water for and hour. Peel, remove the pits.

  2. Save 1 tbsp of the soaking water and add to the food processor. Process finely and set aside.

  3. In a clean bowl and using a hand whisk mix the eggs and dates, flavor with the cinnamon and vanilla extract, add the very soft butter, mix well then add the flour and baking powder.

  4. Bake inside a well greased 8 or 9 inch pan. Bake 30 minutes at 350 degrees F or until a toothpick inserted comes out clean.
