Blend together all Thai curry sauce ingredients: coconut milk, Thai curry paste, garlic, soy sauce, fish sauce, honey, green onions, and chicken bullion
Season salmon pieces with salt, paprika or cayenne, chili powder, and garlic powder
Heat 1 tablespoon olive oil in a pan and cook salmon for 2-3 minutes on each side, then remove to a plate
Add 2 cups cooked rice and broccolini to the pan
Pour Thai curry sauce over rice and vegetables, reserving ½ cup sauce
Layer salmon on top of rice and vegetables
Cover with a lid and cook on medium-low heat for about 5 minutes
Garnish with chili oil, black sesame seeds, and chopped green onions
