Salmon In Thai Curry Over Rice And Broccoli
  1. Blend together all Thai curry sauce ingredients: coconut milk, Thai curry paste, garlic, soy sauce, fish sauce, honey, green onions, and chicken bullion

  2. Season salmon pieces with salt, paprika or cayenne, chili powder, and garlic powder

  3. Heat 1 tablespoon olive oil in a pan and cook salmon for 2-3 minutes on each side, then remove to a plate

  4. Add 2 cups cooked rice and broccolini to the pan

  5. Pour Thai curry sauce over rice and vegetables, reserving ½ cup sauce

  6. Layer salmon on top of rice and vegetables

  7. Cover with a lid and cook on medium-low heat for about 5 minutes

  8. Garnish with chili oil, black sesame seeds, and chopped green onions
