Heat a large skillet over medium-high heat and add oil
Add 1 pound of chicken breast and beans to the skillet
Season the chicken and beans with desired seasonings
Cook chicken until fully cooked through
Add 1 can of Rotel and 1 can of tomato sauce to the skillet
Add garlic, 1 cup of rinsed rice, and 1.5 cups of chicken broth
Stir everything together and cover with a lid
Cook until rice is tender and no longer crunchy
Fluff rice with a fork
Top with cheese and place in oven for a couple minutes to melt
Sprinkle cilantro on top and serve with Southwest Chipotle Ranch sauce
