In a medium-sized mixing bowl, mash the bananas with the back of a fork.
Then mix in the flax meal, sugar, vanilla and oats.
Over medium-high heat, heat a large non-stick saute pan with enough butter to coat the pan.
Use a ⅛ measuring cup to scoop each fritter into the pan.
You should hear a sizzling sound — if you don’t, your pan’s not hot enough.
Wait until the pan is very hot and listen for the sizzle!
Flip the fritters when the bottom is nicely browned, about 2 minutes.
Then cook the other side to brown, about another 2 minutes.
Please note that these fritters will not behave like pancakes. They will be a bit fragile, so flip them carefully.
