Banana Oat Breakfast Fritters
  1. In a medium-sized mixing bowl, mash the bananas with the back of a fork.

  2. Then mix in the flax meal, sugar, vanilla and oats.

  3. Over medium-high heat, heat a large non-stick saute pan with enough butter to coat the pan.

  4. Use a ⅛ measuring cup to scoop each fritter into the pan.

  5. You should hear a sizzling sound — if you don’t, your pan’s not hot enough.

  6. Wait until the pan is very hot and listen for the sizzle!

  7. Flip the fritters when the bottom is nicely browned, about 2 minutes.

  8. Then cook the other side to brown, about another 2 minutes.

  9. Please note that these fritters will not behave like pancakes. They will be a bit fragile, so flip them carefully.
