Chocolate Chia Loaf
  1. Preheat oven to 350°F

  2. In a large bowl, whisk together the flour, baking powder, salt, and cocoa powder

  3. Add the remaining ingredients and mix until just combined. The batter should be thick but spoonable, not stiff

  4. Transfer to a lined loaf tin. Sprinkle extra chocolate chips on top if desired

  5. Bake for 40–50 minutes, checking early. Remove from the oven when a skewer comes out with moist crumbs (not clean). Do not overbake — the loaf continues to firm up as it cools

  6. Allow to cool completely before slicing
