Scallop Ceviche Hot Chili Oil
  1. Gently cook chili in peanut oil on medium-low heat for 5 minutes.

  2. Spread scallops out on a serving platter.

  3. Mix sugar and lime juice in a bowl.

  4. Pour over scallops.

  5. Flip scallops.

  6. Top with sea salt, black pepper and lime zest.

  7. Spoon chili oil over scallops.

  8. Garnish with radish and scallions.
