Chocolate Babka Buns
  1. Mix all the dough ingredients together in the order listed, IF you're using egg add it in after the flour, mix till combined and knead on a well floured surface for 5-10min (10 min is best) Cover and rest for 1 to 1.5 hours. If your house is cold you can put it in the oven with the light on.

  2. Start making your filling about 20 min before the dough is ready by melting the chocolate and stirring in the icing sugar. Mix the butter cocoa powder and sugar together and then mix in the melted chocolate mixture until smooth and glossy.

  3. Decompress the dough and roll out into a rectangular shape approx 40cm by 55cm.

  4. Spread the mixture over it and fold it over in 3rds. Sprinkle some flour over the top and very gently roll it out, not too much just so it's about 50% bigger. You can make 8,9 or 12 buns from this so slice into pieces. I make 9 so I cut in 3 equal parts and then each 3rd into 3 again to create 9 pieces. Make 3 cuts in the middle being careful not to cut all the way about 1cm from each end. Twirl it up and then twist it around.

  5. Place in a baking tray lined with parchment paper and cover and rest for 30 min while your oven heats up to 180C

  6. Bake for 10 min at 180C then turn the oven down and bake for another 10 min at 170C

  7. Brush with honey or sugar syrup as soon as they're out of the oven.
