Place the pork belly in a shallow dish. Place in the fridge for at least 8 hours or overnight to dry out (do not cover the pork with plastic wrap as it needs to dry out). Cut the pork into 4cm pieces.
Meanwhile, make the orange soy caramel. Place all the ingredients in a saucepan over medium heat. Stir until the sugar dissolves. Increase the heat to high and simmer for 10-15 minutes or until sauce reduces and thickens.
Spray pork liberally with oil. Sprinkle with salt. Place half the pork in the air fryer basket. Cook at 200C for 15 minutes or until just golden and crisp. Transfer to a bowl. Repeat with remaining pork. Serve with caramel.
