Mince garlic and slice white part of the scallion
Heat oil in a wok and cook ground beef or pork until brown, then remove and set aside
In the same wok, add garlic, white scallion, doubanjiang, and chili crisp and sauté until fragrant
Deglaze with cooking wine and black vinegar, then add the meat back to the wok and stir-fry until well combined
In a blender, add silken tofu, miso (optional), and peanut butter, and blend until smooth and creamy
Cook udon according to package directions
Assemble by placing udon first, then spooning over the ground meat, and finally pouring over the creamy tofu mixture
Top with scallions
Mix and enjoy
