Perrine's Lemon Almond Cookies
  1. Mix the almonds with the sugar

  2. Add lemon peel, lemon juice and eggwhites to create a dough.

  3. Roll out the dough on some sugar to prevent sticking

  4. Cut out the biscuits (we traditionally use little moons) and place on a baking sheet

  5. Let sit overnight to dry it out a bit

  6. Bake at 325F/160C for 8-10 minutes

  7. Glaze with powdered sugar and lemon juice while still warm
