Add rolled oats, cottage cheese, eggs, maple syrup, vanilla extract and baking powder to blender.
Blend on high until smooth.
Preheat a non-stick pan over medium heat. When the skillet is hot, spray with avocado oil or add some butter to the pan.
Use a ¼ cup measuring cup to measure out the pancake batter into the skillet. Cook 2-4 minutes, flip and cook 2-3 minutes.
