N'duja Butter Beans
  1. Fry the onion and garlic until softened, 1-2 mins.

  2. Then add in your vegan n'duja paste and gently break it down with a spoon until melted.

  3. Add in the peppers, chopped tomatoes and butter beans (don't drain them, it adds extra flavour and makes the sauce super silky).

  4. Season to taste and simmer for a couple of minutes.

  5. Top with yoghurt, parsley, black pepper and a drizzle of olive oil and mop up with a slice or two of sourdough.
