Preheat oven to 375°F (190°C).
In a large bowl, combine cottage cheese, Greek yogurt, egg, vanilla extract, and maple syrup. Mix until smooth.
In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
Add the dry ingredients to the wet ingredients and mix until just combined.
Turn the dough out onto a lightly floured surface and knead for a minute or two until it forms a soft dough.
Roll the dough into a rectangle, about ¼ inch thick.
Spread the melted butter over the dough, then sprinkle with cinnamon and brown sugar.
Roll the dough up tightly, starting from one of the long sides.
Slice the roll into 8-10 cinnamon rolls.
Place the cinnamon rolls in a greased baking dish.
Bake for 20-25 minutes, or until golden brown.
Let cool slightly before frosting with cream cheese frosting, if desired.
