Ghormeh Sabzi
  1. Prepare the base: In a pot, sauté chopped onions in oil, over medium heat until very golden. Add meat, and brown on all sides. Add turmeric and pepper, and sauté for 30 seconds.

  2. Build the stew: Add the soaked beans and sauteed herbs. Pour in approximately 5 cups of boiling water. Bring to a boil.

  3. Simmer slowly: Turn heat down to lowest setting. Cover and simmer gently for about 3-4 hours or until beans are tender.

  4. Add seasoning: In the last hour of cooking, add soaked dried limes. In the last 30 minutes of cooking, add salt.

  5. Let it rest (Ja Oftadeh): After turning the heat off, cover your stew and let it rest in the pot for 20 minutes. This will allow the oil to float to the surface.
