Prepare the base: In a pot, sauté chopped onions in oil, over medium heat until very golden. Add meat, and brown on all sides. Add turmeric and pepper, and sauté for 30 seconds.
Build the stew: Add the soaked beans and sauteed herbs. Pour in approximately 5 cups of boiling water. Bring to a boil.
Simmer slowly: Turn heat down to lowest setting. Cover and simmer gently for about 3-4 hours or until beans are tender.
Add seasoning: In the last hour of cooking, add soaked dried limes. In the last 30 minutes of cooking, add salt.
Let it rest (Ja Oftadeh): After turning the heat off, cover your stew and let it rest in the pot for 20 minutes. This will allow the oil to float to the surface.
