Easy Dan Dan Noodles Recipe
  1. Divide the cooked noodles in 4 bowls.Heat the vegetable oil in a large skillet set over medium heat

  2. Once the oil is glistening, add the pork, and cook, breaking it up with a wooden spoon, until almost cooked through, about 8 minutes

  3. Add the ginger and garlic and cook until fragrant, about 2 minutes

  4. Stir in the soy sauce, sherry, chicken stock, peanut butter, cinnamon, Sichuan peppercorns, sugar and chili paste

  5. Bring to a boil over high heat before reducing heat to low

  6. Simmer, stirring occasionally, until the sauce begins to thicken, about 6-9 minutes

  7. Spoon equal amounts of pork and sauce over the cooked noodles

  8. Garnish with green onions and peanuts.
