Dice apple into ⅛" pieces (brunoise). Toss in lemon juice to stop browning.
Mix flour, baking powder, cinnamon, sugar, & salt together in a large bowl.
In another bowl add greek yogurt & milk, mix until combined & no lumps of yogurt remain. Add egg, vanilla, molasses & oil & mix until fully combined.
Toss apples in dry ingredients to coat apples.
Make a well in the centre of dry ingredients & pour in wet ingredients. Mix until JUST combined.
Heat a lightly oiled pan over medium-low heat.
Pour or scoop the batter onto the griddle, using approximately ¼ cup for each pancake; cook until bubbles form & the edges are dry, about 3-4 minutes.
Flip & cook until browned on the other side, about 2-3 minutes.
Repeat with remaining batter, re-oiling pan between each pancake. If you notice they're burning before fully cooked, turn down the heat slightly. If they're taking too long, turn it up slightly.
