One-pot Greek Chicken & Rice
  1. Combine ingredients for marinade and add drumsticks to a ziplock bag or containers and marinade for a minimum of 30 minutes and up to over night.

  2. In a large, oven-safe skillet, heat 1 tbsp olive oil over medium heat.

  3. Remove chicken from marinade but DO NOT discard marinade.

  4. Add chicken to the skillet and cook until brown on all sides.

  5. Remove chicken and set aside.

  6. Add onion and garlic and stir until fragrant.

  7. Add rice, chicken broth, and then the marinade.

  8. Let the liquid come to a simmer.

  9. Place chicken on top of the rice.

  10. Place a lid on the pan and bake at 350F in the oven for 30 minutes.

  11. Remove the lid and bake for 10 more minutes to allow the chicken to brown.

  12. Remove, allow to rest for 10 minutes.

  13. Top with feta, parsley, sliced olives or an extra squeeze of lemon (optional) & serve!
