Mediterranean Ground Chicken Meatballs with Feta
Makes about 16–18 meatballs
Ingredients
Preheat oven to 400°F and line a baking sheet with parchment paper.
In a bowl, mix the egg, garlic, herbs, lemon zest, lemon juice, olive oil, spices, salt, pepper, and Dijon if using.
Add the ground chicken, panko, and feta. Mix gently until just combined.
Let the mixture rest for 10 minutes so the breadcrumbs absorb moisture.
Form into 16–18 meatballs, about 1 ½ inches each.
Bake for 16–20 minutes, or until the meatballs reach 165°F internally.
For more color, broil for the last 1–2 minutes.
