Small Batch Sushi Bake
  1. Cook rice to package instructions.

  2. Mix in rice vinegar and sugar while rice is warm.

  3. Let set while making the rest of the recipe.

  4. Mix salmon, cream cheese, mayo, and sriracha in a separate bowl.

  5. In casserole dish (mine is about 450 ml) put in rice, pack it down so it's flat.

  6. Break up a few sheets of seaweed snacks (you can also use furikake) and form a layer on top of the rice.

  7. Top that with the salmon mixture.

  8. Bake for about 12 minutes at 375.

  9. Eat mine with cucumber and avocado on a seaweed snack.
