  1. Peel your lemons, avoiding as much white pith as possible.

  2. Mix peels with sugar and let sit 12–24 hours — you’ll watch the syrup form.

  3. Strain, and don’t throw the peels away: dry them for desserts or blitz into lemon sugar.

  4. Keeps in the fridge for 2 weeks, or freeze in ice cube trays for months.
