Pumpkin Cheesecake Churro Waffle Donuts
  1. Preheat your waffle iron

  2. In a medium bowl, beat the cream cheese until smooth

  3. Add pumpkin puree, brown sugar, all-purpose flour, pumpkin pie spice, vanilla extract, and salt to the cream cheese and beat until smooth and fluffy

  4. Set the pumpkin cheesecake filling aside

  5. In a large bowl, combine self-rising flour and greek yogurt and mix until a dough forms

  6. In a small bowl, combine granulated sugar and cinnamon for the coating

  7. Spray the waffle iron with nonstick cooking spray

  8. Take 3-4 tbsp of dough per waffle section, roll into a ball, flatten with palms, and place in each waffle iron section

  9. Place approximately 1 tbsp of pumpkin cheesecake filling in the center of each waffle

  10. Take a small piece of dough to cover the filling, flatten it, and lay on top of the filling

  11. Press around the edges with your fingers to seal

  12. Cook the waffle donuts until golden brown

  13. Immediately roll in the cinnamon sugar mixture to coat

  14. Repeat with remaining dough and filling

  15. Serve with maple syrup if desired
