Add the chopped iceberg lettuce, sliced salami, drained and rinsed chickpeas, shredded mozzarella, and thinly sliced red onions to a bowl.
In a Mason jar, combine the extra virgin olive oil, red wine vinegar, Dijon mustard, salt, pepper, and Parmesan cheese. Mix well.
Pour the dressing over the salad and toss to combine.
