In a large pot, heat olive oil over medium heat. Add sausage and brown for 3–4 minutes.
Remove sausage, then add onion and garlic to the same pot. Sauté until translucent.
Pour in diced tomatoes and chicken broth. Stir in pasta, seasonings, and return sausage.
Bring to a boil, then reduce heat and simmer uncovered for 10–12 minutes, stirring occasionally.
Once pasta is cooked, stir in cream and shredded cheese (if using).
Taste and adjust seasoning. Serve hot, topped with parsley.
