Polish Pork Loin In Gravy (schab W Sosie Własnym)

  2. Preheat your oven to 350°F (175°C).

  3. Generously coat the pork loin on all sides with the custom pork rub. Let sit for at least 30 minutes for best flavor.

  4. In a large oven-safe skillet, melt the butter over medium-high heat. Add the pork loin and sear on all sides until browned. Remove and set aside.

  5. In the same skillet, add the chopped onion and minced garlic. Sauté until onion is translucent and fragrant.

  6. Sprinkle the flour over the onions and garlic, stirring to combine.

  7. Gradually pour in the broth, stirring constantly until the gravy thickens.

  8. Return the pork loin to the skillet, spooning gravy over the top.

  9. Cover with lid or foil and transfer to oven. Bake for 1 hour or until internal temperature reaches 135oC.

  10. Remove from oven and rest for 10 minutes before slicing.

  11. Serve with gravy and garnish with fresh parsley.
