In a 4 qt pot on medium high heat add butter, brown sugar, apples, cinnamon, and nutmeg and cook, stirring, until tender and caramelized, about 2-3 minutes.
Top with oats, milk, as well as vanilla extract, bring to a boil, reduce heat and cook for 3-4 minutes.
Serve with walnuts, a drizzle of maple syrup, and an extra splash of milk, if needed.
