Soy Baked Eggplant
  1. Peel and slice the eggplant in half

  2. Place in a baking tray (flat side down) and cover with tin foil

  3. Bake at 200 degrees Celsius for 15 minutes

  4. Turn them over, sprinkle with sugar and half of the soy sauce. Bake for 5 minutes

  5. Take it out of the oven, cover it with the rest of the soy sauce and bake for another 5-10 minutes
