Preheat oven to 180°C / 380°F.
Place potatoes in a large baking pan, season with salt and pepper. Arrange chicken on top.
Mix all sauce ingredients in a jar and pour evenly over chicken and potatoes. Add 60ml water to the jar, swirl, and pour along the sides of the pan.
Cover with foil or a lid and bake 1 hour 20 minutes.
Uncover and bake another 40–45 minutes until golden and crispy, basting with pan juices 3–4 times.
Serve warm with a simple salad or crusty bread!
