Cook the sweet potato in plenty of boiling water for 40 minutes or until very tender. Drain, and when cool enough to handle, peel off the skin. Place the sweet potato in a large bowl and mash well, but do not add any butter or milk.
Pour the water into the bread machine pan. However, if the instructions for your bread machine specify that the yeast is to be placed in the bread pan first, simply reverse the order in which you add the liquid and dry ingredients.
Sprinkle the flour, rolled oats and milk over the water. Weigh and measure the cooked sweet potatoes to ensure the quantity matches the amount given in the variation. Then add the potatoes to the bread pan.
Place the salt, sugar and butter in three separate corners of the bread machine pan. Make a shallow indentation in the flour (but not down as far as the liquid underneath) and add the yeast.
Set the bread machine to the basic/normal setting, medium crust. Press Start.
When the rising cycle is almost complete, just before the bread begins to bake, add the topping. Sprinkle the rolled oats and wheat grain over the top of the loaf with the water and sprinkle.
Remove the bread at the end of the baking cycle and turn out onto a wire rack to cool.
