Potato Cheese Souffle
  1. Boil potatoes in salted water. Drain, then mash well with butter and a little salt and pepper.

  2. Mix in the grated cheese and chives.

  3. Stir through the egg yolks and then add the stiffly beaten egg whites. Fold these thoroughly through the potato mixture.

  4. Place mixture into a greased deep dish and sprinkle extra cheese on top.

  5. Bake at 190C for 30-35 minutes or until puffed and golden.
