Roll the potatoes in glutenous rice flour, corn starch or potato starch
Cut the potatoes into the desired shape
Deep fry the potatoes at 350°F for 5 minutes
Deep fry the potatoes at 375°F until golden brown
Season with chili powder or ketchup
