One Pan Chicken And Rice
  1. Heat 1 Tbsp Extra Virgin Olive Oil in a pan

  2. Add 400g chicken thigh and cook until browned

  3. Add ground cumin, garlic powder, ground coriander, paprika, white pepper and salt to the chicken. Remove from pan.

  4. Add diced red onion and garlic cloves to the pan

  5. Add 1 cup Basmati Rice and stir to combine

  6. Pour in 1.5 cups water and 1 Tbsp bone broth

  7. Bring to a simmer add chicken back in, cover and cook until rice is tender and liquid is absorbed

  8. Add broccolini to the pan and cook until tender

  9. Garnish with fresh parsley and mint before serving
