Cowboy Butter Steak Bites
  1. Cut ribeye steaks from standing rib roast into thick steaks (about 2 finger widths)

  2. Season steaks generously with Heifer Dust seasoning on all sides

  3. Preheat griddle to 450-500°F

  4. Make cowboy butter sauce: melt 2 tablespoons butter in griddle insert, add rough chopped garlic, thyme, rosemary, and Heifer Dust seasoning

  5. Add small amount of avocado oil to butter mixture and tear in fresh parsley

  6. Place steaks on hot griddle and sear for 30 seconds

  7. Flip steaks to different spot on griddle and sear another 30 seconds

  8. Continue flipping steaks every 30 seconds for 2-3 minutes total to develop crust on all sides

  9. Remove steaks to cutting board and let rest briefly

  10. Separate the spanalis (ribeye cap) and cut steaks into bite-sized pieces

  11. Lightly season steak bites with additional Heifer Dust seasoning

  12. Add Worcestershire sauce and Dijon mustard to butter sauce and stir to combine

  13. Return griddle to 450°F with no oil needed

  14. Place steak bites on hot griddle and char for a few minutes

  15. Add charred green onions to griddle

  16. Pour butter sauce with herbs and garlic over steak bites and toss for a few minutes

  17. Plate steak bites and serve with pickled Fresno chilis and pickled red onions
