In foil or a small roasting dish, drizzle olive oil over whole garlic heads and onion with the tops cut off. Sprinkle with salt, cover tightly, and roast in a 350 degree oven for 1 hour or until tender all the way through.
For the Creamy Garlic & Herb dip, combine the roasted garlic, roasted onion, cream cheese, sour cream, parsley, green onion, Parmesan, salt, pepper, and red pepper flakes.
For the Tomato Basil Oil, combine the roasted garlic, olive oil, mashed tomatoes, basil, red pepper flakes, Parmesan, and balsamic vinegar. Season with salt and pepper.
