Tini's Mac And Cheese
  1. Preheat the oven to 350°F and shred the cheese, combine, and divide in half.

  2. Cook 1 pound pasta al dente. Drain and set aside.

  3. Make a light roux and add seasonings.

  4. Add milk to make bechamel, then add half the cheese.

  5. Add the cooked pasta to the cheese sauce and stir to coat.

  6. Transfer half the pasta mixture to a casserole and layer with half remaining cheese. Add the rest of the mac and cheese on top then finish with the rest of the cheese.

  7. Bake for 25 to 30 minutes, then broil for 1 to 2 minutes to give the mac and cheese a nice bubbly, golden brown top.
