Set oven to 425.
Prepare baking sheet with parchment paper and olive oil.
Cut one head cauliflower.
Peel and cut two sweet potatoes.
Place on baking sheet and season with salt, pepper, garlic powder, onion powder, and paprika.
Bake in oven for 20 minutes then decrease temperature to 400 and bake for another 25 minutes.
Meanwhile, take chicken breast and pound flat.
Whisk two eggs with tablespoon water in a bowl.
Put panko in another bowl.
Season chicken with salt and pepper.
Put chicken in egg then in panko.
Place on lined baking sheet and drizzle with olive oil.
Bake for 25 minutes at 400.
