Resto Vivaldi Zucchini Cream Pesto
  1. Sear zucchini in a pan with a little olive oil, turning to fully brown and soften.

  2. Put zucchini (reserving a few for garnish), garlic, mint, and cheese into blender cup and process into a pesto.

  3. Toss cooked pasta into sauce, thinning with a little pasta water if needed. Top with reserved zucchini and more cheese.
