Gnocchi Sardi (malloreddus)
  1. Pulse the flour and water in a food processor until it's shaggy and even.

  2. Bring the mixture out, squeeze into a ball and knead for 3-4 minutes.

  3. Wrap in cling film and rest for 10 minutes, then knead again for 2-3 minutes and rest for a final 30 minutes.

  4. Slice and roll the dough into ropes about the width of a finger and cut into 2cm pieces.

  5. Roll the pieces down a gnocchi board or anything with a texture.

  6. Boil the gnocchi for 3-4 minutes and add to any sauce.
