Chop potatoes into bite-sized pieces
Heat oil in a pan and add potatoes to cook
Cut chicken breasts into pieces and trim
After 10 minutes, remove potatoes and add chicken to the pan
Cook chicken until fully cooked through
Add 2 tablespoons butter to the pan
Stir in 2 tablespoons flour to make a roux
Add ½ cup chicken broth and 1 ½ cups milk while whisking
Add seasonings and whisk until clumps are gone
Let the mixture simmer and thicken
Stir in ½ cup cheddar cheese and ½ cup Parmesan cheese
Add potatoes and chicken back into the pan
Stir everything together and simmer on low for 5 minutes
Serve and enjoy
