🍠🥣 Sweet Potato Chowder – creamy, comforting, and full of flavor! 🌽

  1. Heat olive oil in a large pot over medium heat. Add the onion and garlic, and sauté for 3-4 minutes until the onion becomes translucent.

  2. Add the sweet potatoes, corn, vegetable broth, and dried thyme to the pot. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the sweet potatoes are tender.

  3. Stir in the coconut milk and ground paprika, and continue to simmer for another 5 minutes.

  4. Use an immersion blender to puree the soup slightly, leaving some chunks for texture, or blend half of the soup in a regular blender and return it to the pot.

  5. Season with salt and pepper to taste.

  6. Serve the chowder hot, garnished with fresh parsley.
