Beat the cream cheese with honey until smooth.
In another bowl, whip the cream until soft peaks form.
Fold the whipped cream into the cream cheese mixture until combined.
Place cookies on a tray and scoop some of the cream mixture on top of each.
Add a small dollop of strawberry jam over the cream mixture.
Freeze for at least 2 hours, until firm.
Melt the chocolate and let it cool slightly.
Dip the frozen bites into the chocolate to coat fully.
Place back on the tray and freeze for 10–15 minutes, until the chocolate sets.
Serve after defrosting for a bit from the freezer and enjoy!
