Just made a batch of the simplest and possibly healthiest cookies using 3 basic ingredients!
These are vegan, gluten free, refined sugar free and absolutely delicious!

There are many flavour variations but I just made the basic ones to try them out and I am mightily impressed!
Dipping them in dark chocolate does elevate them to another level so I would recommend you do that!
Using 70% dark chocolate adds more health benefits so this is a win win situation!
I decorated mine with crushed pistachios and some @blackthornsalt and they look and taste fantastic!
These would make a lovely gift too!
So here is the basic recipe!
Ingredients
200g ground almonds
75g Greek Yoghurt or vegan equivalent
50g maple syrup
70 % dark chocolate for dipping (optional)
chopped nuts to decorate
Method
Simply weigh the ground almonds, yoghurt and maple syrup into a mixing bowl.
Give it a good mix with a wooden spoon until you have a cohesive dough. You can use your hands to bring it together into a ball.
Transfer the dough to a sheet of baking parchment.
Place another sheet on top and using a rolling pin, roll the dough about 1cm thick.
Use a round cookie cutter to cut out circles.
I used a smallish sized cutter and made 15 cookies but make them whatever size you like.
These original recipe made 10 but I prefer smaller cookies!
Bake in a preheated oven at 180C for 12 to 15 minutes until starting to brown around the edges.
My fan oven is really hot so I turned mine down to 160C after 5 minutes.
Allow to cool then dip in melted chocolate, sprinkle with chopped nuts and enjoy!
