Laine’s One-pot Roasted Garlic & Tomato Soup

    1 tsp dried oregano

  1. Toss tomatoes, onion, carrots & garlic with olive oil, salt & pepper in a Dutch oven. Nestle the garlic head in the center (see Note 📝 for milder garlic flavor). Roast 40 min at 400°F until caramelized.

  2. Squeeze roasted garlic into pot, add cottage cheese, broth, and seasonings. Blend until smooth.

  3. Adjust seasonings to taste, heat on stove and serve with crusty bread.
