Coconut Lime Rice
  1. Combine rice, coconut milk, chicken stock, and salt in a rice cooker.

  2. Cook on “quick” setting or white rice setting.

  3. After the cook time is up, allow the rice to sit for 5-10 minutes.

  4. Stir in the shredded coconut and, if desired, the cilantro and lime juice.
