Take the cottage cheese and mash it with a fork until it forms a smooth mass.
Add salt, sugar, vanilla, 1 egg yolk, and grated zest, and mix well.
Then add the semolina and part of the flour, and blend until smooth.
Let the mixture sit for 5-10 minutes.
Sprinkle the board with flour and shape the Syrniki.
Fry the Syrniki on low heat on one side until a crust forms, about 3-4 minutes, then flip and fry for another 3 minutes on the other side; you can slightly reduce the heat.
Cover the Syrniki with a lid, remove them from the heat, and let them sit for a few minutes.
