Homemade Marshmallows
  1. Soak the gelatin in the ⅓ of a cup of cold water in a small bowl and set aside to swell for 10 minutes.

  2. In a large saucepan dissolve the sugar in the 1 ½ C of water over low heat, stirring constantly.

  3. Add the swollen gelatin and dissolve.

  4. Raise the temperature and bring to a boil - once it comes to a boil don't stir anymore..

  5. Boil steadily, but not vigorously, until the mixture hits 230-234 (thread stage) - remember to adjust for your altitude. It should take 7-15 mins.

  6. Remove from the heat and pour into a bowl, or mixer and add the vanilla and beat the mixture until very thick and white.

  7. Spray a 9x13 pan with bakers joy or line with parchment paper (Even when I line with parchment paper I tend to use non stick spray to help) and pour the mixture into the pan

  8. Let set completely - about 2 hours

  9. Cut into squares and dust with a mixture of cornstarch and icing sugar.
