Preheat oven to 200°C / 400°F
Heat a drizzle of olive oil in a pan
Add chopped mushrooms and cook for 8–10 minutes until they release their moisture and start to brown
Add garlic, parsley, salt, and pepper and cook for another minute, then set aside to cool slightly
In a bowl, whisk together eggs, olive oil, milk, flour, baking powder, grated cheese, salt & pepper until smooth
Fold the cooked mushrooms into the batter and mix gently
Pour into a lined or greased baking dish or loaf pan
Bake for 25–30 minutes, until golden and set in the center
Insert a knife to check that it comes out clean
Let cool slightly, then slice and serve with a simple salad or on its own
