Vietnamese Garlic Butter Chicken Noodles
  1. In a small bowl, mix together the garlic, chilli, sugar, fish sauce, lime juice, and hot water to create the Nuoc cham dressing. Taste and adjust the seasoning as needed, then set it aside.

  2. Prepare the rice noodles according to the package instructions, then drain and rinse them under cold water to prevent sticking. Set aside.

  3. Heat the vegetable oil in a wok or large frying pan over medium-high heat. Add the sliced chicken and stir-fry for about 3-4 minutes, or until it begins to brown at the edges.

  4. Lower the heat to medium and add the chopped garlic and butter to the pan. Cook for 1-2 minutes, basting the chicken with the garlic butter.

  5. Stir in the soy sauce, fish sauce, sugar, and black pepper. Continue to stir-fry, ensuring the chicken is well coated in the fragrant sauce.

  6. Divide the cooked noodles into serving bowls and drizzle some of the Nuoc cham dressing over them.

  7. Using a slotted spoon, place the chicken on top of the noodles, reserving the remaining garlic butter mixture.

  8. Add fresh herb sprigs to each bowl, then sprinkle with sliced chilli and fried shallots.

  9. Drizzle the reserved garlic butter over the top and serve with lime wedges on the side.
